Woodchuck cider is the nectar of the gods. I love it. So much that I saw this recipe, and had to try it.
Here is my revised recipe, as I royally screwed it up.
Ingredients:
2 cups Woodchuck Hard Cider
1/4 tsp apple pie spice (or sprinkle or cinnamon/allspice because you can’t find the nutmeg)
4 tbs of butter
1/2 cup sugar
1/4 cup brown sugar
2 tbs heavy cream (or whole milk? I still don’t know how it came out yet.)
1 tsp sea salt (Kosher salt?)
Directions:
In a sauce pan add hard cider and bring to a boil. Forget to reduce down1/4 a cup. Sorry.
Mix in sugars, butter, heavy cream and spices. Over medium heat bring up to about 252 degrees on your candy thermometer. Or take like 4 seconds to clear the stove when it’s about 218 and accidentally cook it to 290.
Immediately remove from heat and pour into a silicone baking mat.
Sprinkle with sea salt and allow to cool until hardened.
With a very sharp buttered knife, cut caramels into 1 inch squares.
This is my caramel blob. I’m scared. It should taste good?
